Olabi is a nice guy. His tests are very number specific so definately remember 4.6 for pH (for whether it's highly acidic or low acid). If you do bad on one test, you're screwed because each is worth 20% of your grade. There are two tests and a final. The final was the easiest test. I studied for all of them, but the first test was so hard and random that I got a C on it and the highest grade I could possibly get in the class even if I got a perfect on everything else was a B+ (which I got). Make sure you remember EVERYTHING! Every little detail that you wouldn't think would be on the test will be, all the stuff you study won't. The quizzes are straight from the book and are random so make sure you go to class. Lecture notes printed off-line will help to keep up because he'll get behind and straight up rush through everything and expect you to know everything still. He's the only prof for FSN 230 lecture so you'll have to take him. Remember the name of the class is "Elements of Food Processing," that's one of the questions on the first test and like half the class got it wrong because the name of the book is Introduction to Food Science or something.

Smart man. I like his accent and found him strangely attractive. That was my motivation for going to class. The material wasn't particularly difficult, but you have to study because he is a stickler on details. I would suggest making flash cards for quick memorization, because you have to remember so many small, seemingly irrelevant facts that just staring at a page of notes definitely didn't work for me on the first test. But after I wised up and made cards, I got A's on everything else. good luck.

This is the first C I have recieved in my entire life. I hope that says something to all of you out there watching their GPA. Do not take him--this class was a nightmare!
